notice all the songs used in these are from those games?

it's because the audio tracks are separated for the multi-instrument controllers

i.e. vocals are separate from everything else for the singer, so you can just yank them out alone

Most decent sound programs can invert a track's waveform. Then that inverted waveform cancels out the unaltered one. Search on google for a bit, for a better explanation than I can give.
