  • dont know why but frozen , never tastes as good as fresh...might just be me or the way i defrost....the kick in the taste seems to dissapear once defrosted.?!

  • @taz1976g freeze in ice cube tray and only thaw a few cubes at a time or however much you need. Freeze in ice cube tray immediately after making it. Blender to freezer, save for what you will eat that day. Ive had frozen hari chutney that was a year old and it still tasted great. Store cubes in plastic bag not in the tray. Freezer burn kills flavor. Keep the air out. If you have done all of this, try a colder freezer or one that doesnt fluctuate in temperature as much as the main one.

    Is this cilantro chutney used for salad dressing? There's this Indian restaurant in my city, and it has this fabullous and tasting cilantro dressing that I'd love to know how to make. Ive searched fiercely for the recipe, but I am not sure if this is the same cilantro dressing as the one they used in the salad, is it?

    But what can I use as a substitute for that mysterious Hing? I'm not sure I can find it in my country... and even if I do all the comments about it's smell and keeping it in the garage (!!!) have me worried :)

  • @stardustkay: Its called "asfoetida" check (wikipedia) in India its popularly known as "Hing" it has a very strong aroma and it can loose its smell if left open, so make sure you always keep it in a air tight container and wrapped in plastic. Also, in any Indian store you will find hing powder that is not that strong because its mixed with some flour, its still has got the flavour but not that strong. I too use that powder only and you need not to keep that in garage!! Use just a pinch or two

  • I love cilantro chutney. And have made it. But I always omit Hing, because I'm not sure what it is. I know I can get it - but I'd like to know what it is. Is is Mango powder?

  • not mango powder, it is something else entirely. it is also known as asfoetida it smells really strong.

  • it is called astafoetida it is available from indian shops it is a spice

  • Leave the oil out and do NOT use any stems but the smallest ones. Be SURE that the cilantro is VERY fresh. Coconut powder and mango powder (amchur) are excellent additions.

  • I made your three chutneys today. The tomato and the tamarind are delicious, but this one came out bitter. Do you have any idea what I did wrong?

  • Whay Hari or cilantro chutney came out bitter, some times stems of cilantro are hard thick if you use some of those stems chutney will be bitter and not very smooth, that is the only reason i can think.
