@taz1976g freeze in ice cube tray and only thaw a few cubes at a time or however much you need. Freeze in ice cube tray immediately after making it. Blender to freezer, save for what you will eat that day. Ive had frozen hari chutney that was a year old and it still tasted great. Store cubes in plastic bag not in the tray. Freezer burn kills flavor. Keep the air out. If you have done all of this, try a colder freezer or one that doesnt fluctuate in temperature as much as the main one.

Leave the oil out and do NOT use any stems but the smallest ones. Be SURE that the cilantro is VERY fresh. Coconut powder and mango powder (amchur) are excellent additions.

Whay Hari or cilantro chutney came out bitter, some times stems of cilantro are hard thick if you use some of those stems chutney will be bitter and not very smooth, that is the only reason i can think.

not mango powder, it is something else entirely. it is also known as asfoetida it smells really strong.
