@ariownts123 Because it's a waste of oil? He already explained it, chicken wings have enough fat to essentially fry themselves. Sure you can take the easy route and deep fry them like most people but if you want to refine it more then you can do this. Nobody said you had to do it this way, everyone has their own recipe.

I grew up with REAL "Wings"! I'm a native of Niagara Falls, NY (which is by Buffalo).....so I know my "Buffalo Wings". YUMMY! Real Wings, Real Pizza, Ted's Hot Dogs, Sponge Candy, Loganberry Drink....ahhhh, memories! Nice, heavenly, edible memories!
I made these wings and they were delicious, I just came up with my own sauce. I highly recommend you set it in the fridge as directed. Steam all of them just like he did, you dont want the wings stacked up on each other, trust me!
You also want to make sure you let them set in the fridge again after they're done steaming. Make sure you have a cooling rack, or else the wings will just sit in their own juices when drying in the fridge for the second time, or when you throw them in the ove.
Overall if you do things like he did, You will come out with some wings with very crispy outer skin, and the inside will be so tender. Best wings I have ever made.
I'm not so sure about buffalo wings and hot wings being the same thing. Most buffalo wings i've eaten tasted like one part chicken wing and thirteen parts sweet sauce with a touch of Tabasco. Is it such a crime to want the goddamn grocery store hot case to use less sauce or to serve the sauce separately? IS THAT SO WRONG?!

At :52? Oh... you mean in part 2 of this episode. He's using "Parchment Paper" it's kinda like butcher paper only it's been impregnated with silicone. It's non-stick and can take high oven temperatures without bursting into flames or melting like wax-paper.

Not quite. Directing the air downward does produce a thrust in that direction, but the lift is actually produced by a difference in air pressure. The the pressure increases under the wing and decreases on top when it is held at a certain angle. The flat surface of the wing gets caught in the air moving through this pressure change, and thus moves towards the lower pressure (up).
