Also, the Cod fillet is always deep fried in 'Vegetable Shortening' which I can only describe as some type of Lard. The Fillet of Cod is always cooked from frozen, so perhaps you might consider trying this to see if it makes any difference in authentic replication. Otherwise, great attempt mate.

Do not put the bun in the microwave for 15 seconds. Put it in the pan and just make it hot enough, you put it in the microwave and after it cools some the sides of the bun will be hard and saggy. Like chewing gum
