He is a well known hunter of Wookiees, Wampas (etc) and has their remains (such as skeletons) displayed as trophies in his office.

There is a Gungan (Binks's species) frozen in carbonite hung on a wall. Many suspect that this is in fact supposed to be Binks, although others doubt it.

That's the most that one can really gather about what happened to Binks after Episode III. Hope this helps.
