To wade in on the Beer issue, its a big con - proliferated by TV chefs, don't be fooled. Chipshops use a pre-mix from the cash-and-Carry, the only "secret" in terms of ingredients is that it has Costco written on the label. Batter is flavoured by the fat, not the food or the beer.
No Yeast either.
Ps, try it with a Shortening (veg or animal), rather than vegetable oil, its a clincher.

There is absolutely no substitute for the beer. The carbonation makes the batter fluffy with lots of bubbles, and gives an essential flavour. However, all the alcohol will evaporate in the hot oil.
@sahirdonsocomeon Hey...you can use alcohol free beers...still gives that beer batter taste but without the alcohol. Or if you don't want to use that...use soda water. I haven't lived in the U.K for over 5 years..so for brand names I'm a little rough (Tesco alcohol free beers are good) I hope this helps, cheers mate.

@dnakirimoto Hi..What you have said is right to a certain degree...but I respectfully disagree it doesn't add flavor. Adding beer to a batter creates body and lightness..also colors the batter and flavor.

When I was in Australia I often got battered fish made from Spanish mackerel. That was really good.

I don't know what our equivalent of cod is here. Our main fish for F&C is "flake", which is shark.
