  • I can't watch this without drooling everywhere.

  • I like tripling the pickling spice and using the onions "PEEL and all" for a deeper SAFRON-LIKE broth. Cover and BAKE not stove top, by Dutch-ovening it around 350f it sucks in the flavors so much better.

    The most iportant cooking clude is that when you remove the beef, wrap it tight in aluminum foil and into a heat resistant bag for about 20 minutes to rest WITHOUT vaporating any juices - that prevents and stringiness

  • once more for those in doubt....corned beef is a purely Irish/English creation...and the name comes from "corns of salt"...hence corned....its origins date back to 800AD in cork....and cork was the highest exporter of corned beef to the US until late 1800s.......check your facts people...its most offensive when you bastardise a dish and claim its conception to be purely American.

  • I love corned beef. I make it for Christmas and even have some in addition to Ham and Turkey during thanksgiving meals (not a big Turkey fan at all). After the initial "corned beef for Christmas?" reaction, once they bite into it they conclude "yes, corned beef for every Christmas!"

  • I like my veggies SUPER tender, and my stove sucks so I make mine in a roasting pan in the oven with the veggies in as long as the meat. the veggies soak up most of what water doesn't evaporate and the fat on the brisket cooks into them making them taste really yummy. I keep the water to pour on top of everything while serving and what's left I freeze for soup.

  • In Ireland we used Bacon and Cabbage but Corned beef and cabbage became popular in US after Irish immigrants in the east used corned beef instead of pork in their traditional dish...so the idea for the dish did come from the Irish ---and here the meat is cooked first-took out and then the cabbage is cooked in the juice of the meat.for over cooked meat spoils the dish.& your lil trick on how to cut the meat-oh come on lol--just cut it whatever way as it all goes down the same way anyways ..

  • I love making corned beef in my dutch oven. My special incredient is half a jar of trappeys tabasco peppers in vinegar. It gives the corned beef and cabbage extra zing!!

  • I use less water to braise, add 2-3 tablespoons of diced, skinned, tomato. And thicken a bit more with a beurre manie.

    The dish needs acid to cut through the fat and the tomato delivers.

  • @Bistro223 you can add whatever you like but since brisket is so fatty and the meat is marinated in the corning brine/spices, it isn't really necessary. It will still come out flavorful as can be.

  • I put my corned been in a covered roasting pan and cook it at 300 degrees for an hour a pound.

    You can add onions.

    Later, just boil up some cabbage and carrots and little red potatoes.

    IF you want to add the carrots to the roasting pan, you can do so and the potatoes as well. It might be too greasey for some of you tho.

    The corned beef is done when it falls apart with a fork...at least that's the way we like it.

  • @kotk05 So true. If you limit the spices of this dish to black pepper corns, salt or better yet, fish sauce with lemon and add sweet plantains, you would have what FIlipinos call Nilagang Baka. Man, it's good!

  • Etymologically, the word "corn" originally meant something like "small grain or pebble". We call the vegetable corn, "corn", because the kernels look like small pebbles. ON the other hand, the original act of "corning" beef in the old days would be to pack it in salt. In this sense, the word "corn" refers to the grains of salt. Nowadays, I think corn beef is usually brined, not packed in salt the way country ham is.

  • Not hardly, but there are a lot of foods that originated here (the US) due to the mixing of cultures. Quite contrary to what you might believe, Americans tend to think that what we eat in Italian, Chinese, and Mexican restaurants is "authentic". Wrong!
