  • Nice Recipe, here's my TOTD.

    Use 2 or 3 Tablespoons of the Pasta Water in your Sauce, this makes it stick to the Pasta when you add them together.

    A simple assessment of the quantity of the ingredients that Nicko recommends in his recipe, which is written in the video description for everyone to see, should indicate how many servings you will get out of this dish. 375g of pasta should be enough for about 4 people given that an average serve would be around 80 to 90g/person.

  • I wasn't sure why people put salt in the water but I looked it up and its because it seasons the pasta. Adding the salt after will not taste the same and have a salty exterior, yuck. ;)

  • @ornitorrinco01 Hahaha yes I can buy cream, but just 2 types......liquid cream u can use in cooking and liquid that you can whisk and use as topping.......no thickening cream per say. The one you use looks like creamcheese that has been stirred.....do I make any sense ?

  • @GerdaKristjans Well in that case then you should use the liquid cream that you can wisk to make whipped cream because this type of cream is thicker and has a higher fat content this allows it to thicken and to be used as a topping when you whisk it. That is why in Australia we call this Thickened Cream, because although it is a liquid it is slightly thicker than cooking cream. But it is also good to use in cooking especially to make cream based pasta sauce because it sticks to the pasta better.

  • We don't have thickened cream here in the US...the only thickened equivalent we have is sour cream - which isn't the same thing, obviously. Heavy whipping cream is not thick enough by comparison even though it has rougly the same percentage of milkfat, so what would you recommend for Yanks to use in place of thickened cream? This recipe looks very delicious & simple to make as well. Great video, Nicko! Thanks for posting! :)

  • @tchapman1977 I would suggest that right after you get the nutmeg, garlic paste and butter incorporated, add some flour (maybe a tablespoon or two) and cook until fragrant. After about a min of constant stirring, add evaporated milk (1 cup) and the mascarpone and continue on with the recipe.

    Im american but this does not look right.. Does 10g not make a difference between a cup?

    their essentily the same so just use rough measures, e.g. 1/2 cups

    Cup is volume. Grams is weight. 1/2 a cup of feathers wont be the same as half a cup of gold etc. :)
