What would have happended if oil that was on fire dripped out of the pot, it would spread more easily. What these people should have done is shut off and disconnected the propoane (if they could safety do so), if they had an ABC extinguisher available use that if that failed call the fire department.

Covering the opening and cutting off the air supply was a good move, also saturating the deck and spraying the outside of the fryer looked like a good idea. It cooled the pot down which also helped put out the fire. The quick moves and thinking on your feet saved the deck and the house. Keep an eye on the oil temp.
