I'm impressed that the challenger's mother made 7 dishes. That's the kitchen stadium record, I think.

Uni/sea urchin roe is not an ingredient I think of most people having in their homes.

According to wiki, the record is actually 8 dishes, made by Iron Chef Michiba

That probably happened later in the series than any of the episodes Leon/archo89 has uploaded here. In the earlier days of Iron Chef, 3 or 4 dishes were more common. This challenger's mother appeared at a time when 7 dishes was a big deal (and 3 more than Chen did). Depending on how courses are presented, I think some chefs deserve credit for 2 dishes, which are served as one.
