the butter coin is like a bite out coin that folds a little different. The middle coin is part of the first coin and when he throws it down it unfolds into one coin.

I figured it out. Isn't it obvious? On of the coins he is holding is gaffed, like a flipper coin. He steals a coin and puts it into finger palm.
