It's sad that these scenes were deleted. I usually do not like political scenes, but the scenes where Padme and her fellow Senators are creating the Rebellion are both important and interesting. There is more detail on the Delegation of 2,000 subplot in the ROTS novelization. I also liked the part where Anakin and Obi Wan were communicating with each other; too bad that scene was left out of the movie.

No. The lightsaber death never happened in canon. When it was deleted from the movie, it was deleted from the story, too. What actually happened was that Shaak Ti was able to escape Coruscant during the Temple invasion. She later hid out on Felucia, as you already know.

Yes, it did show a good relationship. The signals the two of them were sharing was an especially nice touch. It showed that much needed camaraderie between Obi-Wan and Anakin. These deleted scenes had more character development than most of the movie. If they'd kept several of these and built off of them, we'd have had a much better movie.

@jahchild1904 Jinn scenes were planned but Liam Nesson was in some sort of accident which prevented it. Vos scenes were also planned but they never took off.
On the Revenge of the Sith movie double disk pack, it had those along with a short commentary about why they weren't put in. Most of them were kept out due to time restraints and they actually happened just they didn't show them. The Yoda one didn't fit in with the children being taken to planets.

The scene with Shaak Ti is non-canon. She never went aboard Grievous's ship. She was later hiding out on Felucia where Starkiller found her.
