I am not at all happy about these below pasteurising recipes. I get his idea, but 100C with foil works EXTREMELY well and kills the bacteria. In fact, gordon ramsey mentions it, and is right. Cooking meat below the pasteurising temperature, you need to know the farmer and slaughter house on a personal level. And cut the outsides off.
That's not a fair test, since both they and the analyst knew which was which. I wonder if this would turn out the same if they didn't know which was which. Heston cooks scientifically, so he should also appreciate what a double blind test is and why it matters. Would they broadcast it if he thought supermarket battery chicken was the best? Also... yes, I agree with the idea, and dislike battery farming, but the test is still unfair.

Those dunks in hot water won't work perfectly, since the outside takes time to warm up. He then leaves it to sit out, allowing it to contaminate again. I have seen people making THE SAME MISTAKE with autoclaves in university. Cooking meat below pasteurising temperature, food poisoning is a real possibility
