Expert? Not sure I would have used my bowl as demostrated in video and knock off the orbital motion. I switch out my hooks from the paddle to the dough...just not a very put together video...but have seen many of the so called "Expert" ones that are just bad.

Way back in the day, Kitchen Aid mixers were made by Hobart. Then Whirlpool bought them and the quality went down the drain! They're still decent mixers, but not like they were when they were made by Hobart!
