  • I think red one is colored pickled ginger, pink is sakura denbu (sweetened ground cod fish), brown strips at 1:55 is kanpyo (cooked hyotan skin: calabash), yellow thing at 2:05 is(maybe) scrambled egg.

  • Hey you know that water he's using, it's called sou water. Meaning it has Vinegar in it you what vinegar is? A natural disinfectant. You know what the towel is soaked in sou water. Holy crap that means they must have crazy clean hands. You keep your hands wet at all times when making sushi. The water you keep them wet with has a natural disinfectant so guess what their hands are flipping clean!!!!

  • I don't think he lives in usa if you're referring to the hygiene of the kitchen. He seems to be from an asian country, its much more lenient on their rules and regulations. Im sure you saw someone eat in the background too, because I saw it too. People have to eat you know. Alot of people eat in the kitchen in the back.

  • yes but wearing gloves when handling food or preparing food is essentric. it's not nice to get food poisoning.

    Notice the number of times he (and in general all good sushi chefs) cleans his hands, knife and board while preparing this one dish.

  • So what you're saying is that as long as he wears gloves it's all good, no matter where he's been with those gloves on. Clean hands > Dirty gloves. Take the stick out of your ***, it must be painful.

  • Umm, I don't really call that cleaning their hands when they just basically wet their hands with water and with a cloth that is probably contaminated or dingy cuz it's wet.
