  • I normally hate cornbread but these acutally look tempting.

  • Cooking my mom new years dinner, she's done such a great job cooking for the holidays i thought i'd give her a little treat. Thanks so much for this recipe and the Hoppin John recipe im sure it'll be awesome!

  • this sounds good and pretty simple I love corn bread and I love cheese I dont have a corn bread pan but looking through my stuff (Im a collecter) I found a cast Iron pan that has snowmen in it like six of them in the pan,,I wonder if I can use that,,and have snowmen corn sticks with onion and cheese although it wouldnt come out to be sticks but a snowman instead wonder if that will work,,I have never used the pan before,,its heavy made out of cast Iron

  • Hi betty! can you cook these in a square container? I do not have corn bread stick pans and was wondering if there is a way to make this with out one!

  • @glimmershimmer15 You can pour the batter into a square pan, and then you will have cornbread. This is basically how I make cornbread, although I do have a video on cornbread in bettyskitchen.

  • Going to have to try this recipe. Think the problem will be finding a suitable tin. Suppose there is no reason why I couldn't make them in a cake (12) baking tray..

  • @bettyskitchen Cracker Barrel sells the corn ear pans but so do most places that sell cast iron pans. Cabellas have them in the camp ware dept.

  • @mojuta1 Thanks! I inherited the pan from my mother. My parents were married in the 1930's, so she probably obtained it about then. you would only be able to find one in an antique store, flea market, peddler's mall, yard sale, or similar outlet. It is a wonderful cast iron cornstick pan.

  • Hi Betty, Sorry for the late Happy Anniversary wishes. Your hubby is one lucky man but sure he's always known that lol. I remember my grandmother using a cast iron mold like this but since seeing this video I swear I can't find a mold like this anywhere ! ! ! Any ideas where I might could locate one for this recipe ? Forget Walmart - they dont carry it least my locals don't.

  • @dodge1997 Hi! It will be hard to find this cornstick pan. The best thing you can do is go to places like peddlar's malls, fleas markets, estate sales, yard sales, Craigs's List, etc., in search of old cast iron pieces. The newer cast iron just does not work as well, and it's not easy to find even a newer piece like this. You can bake the batter in muffin tins while you are in search of an old, authentic cornstick pan. Thanks for your comment and question!

  • The were very tasty indeed. Have to admit to adding some finely diced jalapeno peppers to the mix.

    I actually have a cast iron cornstick pan that I found at a yard sale, works great!

    this sounds delicious. Do you have an idea how much baking powder or soda I'd need to use if I don't have self-rising corn meal and flour?

    My moms asking me to do cornbread again since quite some time. but last time I found the "normal" cornbread I made kinda boring. It worked fine with the Chili but once that was eaten I didn't have any more use for it! Guess next time I'll try this recipe instead, 'cause it sounds like you could it it pure too!

  • Thanks for your lovely comment! For each cup of either plain flour or cornmeal, add 1/2 teaspoon salt and 1 1/2 teaspoons baking powder.

  • These are really good! (LOL - almost burned down my kitchen making them! Some of the peanut oil in my cornstick pan spilled onto the bottom of my oven. But they were worth the hazard.)

  • I inherited this particular pan from my mother. It is older that I am, so you won't find one just like it. You should be able to find a cast iron corn stick pan at a store where they sell cast iron skillets, etc.

  • Betty, Looks delicious BUT ....I played this back

    several times to see if maybe I missed something and finally realized that you

    did not mention How long to bake or

    cook at 450 degrees ?

  • If you will click "more info" in the side bar at the right, you will see the full recipe. I specified baking these 7 to 8 minutes. I let mine bake for 8 minutes--just keep watching to see if they are brown enough for you. You can stick a clean toothpick in the center of the largest one, and it should come out clean. If it does, and the cornsticks are not as brown as you like, turn your oven to broil for about a minute--and watch carefully! They should be great!

  • Yes, bake it until it pulls aways from the sides a bit. you may have to turn the oven on broil for a minute. You can check for doneness by inserting a toothpick in the ceneter, which should come out clean. Cut it into squares and serve immediately--It will be great!
