Having the bolt stay open with an empty mag is a great feature on a battle rifle, helps keep you alive in combat. The 1903 Springfield has a switch that allows the bolt to ride over the follower without hacking off the follower end, an improvement to the Mauser.
If your old enfield or mauser will never see combat again you can make it smoother by this process. The follower stop can mar and scratch the bolt face. If you feel you may use your old rifle in a combat situation, leave it alone.
I would only make mods to original rifles if I intend to never resell the rifle. I wouldn't want a mutilated piece of history floating on the open market at a decreased value because of my modifications. The lower the value the more likely it will become further butchered. Respect the rifle as it is!

@Rektek23 My thoughts exactly. Not only that, but if you ever needed to use the rifle in a hastey situation, it tells you it's time to reload.
