This sounds really interesting. I'm not sure how I feel about freeze dried spinach when I don't really love regular spinach....but you never know, it might be worth a shot.
nice having the flakes so small. that way, you can season stuff a bit or mix it through your rice or potato dishes without much grief. and freeze dried stuff usually keeps almost ALL of the nutrition of the fresh equivalent, so i bet that's the case here too.
I wonder if this would work well in a green smoothie?

I've never thought of using spinach in so many ways before. I'll have to try your idea of a side dish with butter and garlic. Sounds really good.
