  • I wish they kept the standards they brought with the Commonwaelth games in New Delhi. That was a pivotal moment where we could have turned the whole concept of hygiene in street food completely for the better. Ahh bloody ppl will never learn. We blame it on the politicos but it is the public's fault as well. YOu cannot blame babus only, when the ppl don;t voice their opinions loud enough. And they can't formulate opinions unless they are taught or at least exposed to such things

  • Just in case people are wondering what the last spiral thingies were: They are called IMARTI. Imarti is the desi cousin of Jalebi. Jalebi came to India/Pak through the Arabs, known as Zalabiya, later modified to Jalebi.

    Imarti is made of various daals, as opposed to Jalebi, which is made of maida. :)

  • @Desi4evah Thanks for this good information. I am always interested in such information and I did not know about word Jalebi. But what is the spiral thingies you are talking about ? Is that the white one he added in bowl ? it is usually called "lachhe" in punjabi or there might be some other word for that. To clear pronunciation of IMARTI, if it is possible for you, please write that word in Hindi for me, (I mean Devnagri script)

  • @ktpunjab No the one you're talking about is white noodle like thing. That is either made of maida or rice flour, which is used in Falooda.

    I am talking about the imartis at the very end. As you end your video, you will see a big kadhai with jalebi-like swirls. It appears at 6:15 in the video.

    It is also known as Jhaangri. But most popularly, Imarti. :)

  • @Desi4evah That was the first shot of the next movie which is also on my account under name Jalebi. Those are actually jalebis. but I know what Amrati you are talking about. YOu are right about that but these were jalebis. It might be different in different parts of india / pakistan, but in pakistan amrati is usually heavier and thicker than jalebi and jalebi is usually served freshly made while amrati is like any other sweet, can be served in later days.

    Bhai, I called it Imarti on the basis of its shape. Jalebi does not have that kind of shape. It's irregular. Imarti had one circle, surrounded by many circles. It's like a bangle surrounded by rings. So that was my judgment. :)

    But if that person made jalebi in the form of Imarti, it could well be possible. Where is the rest of the video.. :)

  • @Desi4evah your judgment is correct in a sense but it is again because jalebi can be slightly different in shape from area to area. Mostly in villages etc, they make it irregular or in a continous shape , which is bigger than amrati. But this jalebe was closer to amrati in shape. I m sending you link separately in message

  • @californiadajatt it is called "RABDI". Actually it is white , as it is made of milk, you can consider this a type of Khoya, but color is added to make it orange or yellow and is slightly liquid as compared with Khoya.

  • thanks for your positive comments. he is roasting dry salted black chickpeas in hot sand. most of street vendors selling such snacks are afghan refugees who came to inner cities of punjab in search of livelihood.

  • he's roasting chick peas here. Sand is used to roast peanuts and corn also.

  • at 1:00-3:10, I wouldn't eat that shit. They used their hand to put the noodles and ice to make the falooda. Personally I find that shit nastyand who knows where their hands could have been.

  • @fucmeintheinside how do you think vegetables and fruit are picked or bread kneaded etc etc as long as the guy has clean hands I have no problem with handled food, don't think for a minute in western restaurants food is made with glove or not handled

  • Haha that is definetly NOT Falooda as I know it, and why is he using his hands for the crushed ice, that is just disgusting, im sure he could have easily used a spoon. you should have ice cream or kulfi with traditional falooda and it should be more red than orange. it looks horrible.

  • Daadi Jaan, Kulfi was optional and had to pay extra rupees 35 for that, so I did not have it. And I don't know what tugmaari is. This is the way falooda is made in this part of Punjab. Please tell me what is tugmaari and what is Falooda where you live.

  • Ooo oki... I have always ahd it with kulfi and I had it in Karachi and in Hyderabad Pakistan also I had it in Bhopal India.

    I found out for u what tugmaarfi is called. Its called 'basil seeds' just google it and you will find it. I tried to post it here and they stopped my msg! :)

    They give it more consistance! Its nice you should try it someday.

  • thanks for this information dadi jaan. After your explanation, I understood what tugmaari is. It is called "TuKH Malangan" in punjabi and some falooda shops have it, some don't have it and its also choice of the customer to add it or not. No, I reside in Canada, but made that video when I visited Sialkot last time. By the way, taste of falooda here can never be like that of Lahore or Sialkot or anywhere in India / Pakistan.

  • dadi jaan, just for your knowledge, the word "TuKH Malangan" is actually "TUKHM E MALANGAN". Word "TUKHM" means "seed" and "Malangan" is plural for "malang", a fakeer. So this is "seed of fakeers".
