The causality is pretty clear. Before stabbing she was no. 1, after she was far from it. Was it the wound itself, the mental trauma or the long forced break? It doesn't matter really. Maybe like Hingis and many others she would have peaked at an early age anyway. 'What if?' is just speculation.

Not losing a match in which you win just one point less than your opponent. That is called a "very close match that could have gone either way".

Even in 1991/92 (which were Graf's worst years in the 1987-1996 period) Steffi won most of her matches against Seles (3 of 4).
So what the hell do you mean with "Steffi could not stay with her"?
Even average Graf was better than peak Seles - Steffi had a better winning percentage in 1987-96 than Seles in 1991/92. That says it all.
