I've made them with Special-K cereal and they turned out great. Instead of melting the chocolate, I just put the chips in with the cereal after the marshmallows are melted. I also melt chunky peanut butter in with the marshmallows and butter. Try it, you'll love it!

I made this last night.
I took your advice, and did some experimenting.
I used hand-made marshmallows from the confectionary, instead of the bagged kind.
I subsituted "Peanut Butter Panda Puffs" (an organic cereal from some company called "Enviro-Kidz Organic") for the Captain Crunch.
And I used salted goats-milk butter instead of margarine; and some organic milk-chocolate-chips from "365" (that's Whole Foods house-brand name).

I wouldn't use chocolate chips though, maybe crushed peanuts instead. . .or nothing. Cap'n Crunch is great all by itself.

You can also spray the bottom of the pan and the spatula with Pam this will help the marshmallow not stick .
