Just FYI, while I agree with most everything you said, and love soft shell jackets, Gore-Tex does not necessarily have to be insulated--for example, many windbreaker/rain coat-type lightweight shells are available with Gore-Tex. It is also technically breathable, though not as much as soft shell or fleece. Soft shell is indeed probably the best compromise of warmth, wind/water resistance, and weight.
@UrbanEDC No problem bud. Gore-Tex is basically just a thin sheet they sew in between the outer layers of a garment, similar to wind blocking materials, but for water as well, obviously. Take it easy.
