NRH, tortilla mixes often have fat in them. Fat in any food will reduce practical storage time. By stocking the basics and shortening you can extend shelf life.
On the plus side, I make up the dry ingredients and keep them in ziplocks inside a gallon jar in my pantry. then all I have to do is add the water. It goes pretty quick since I have already done the cutting in work (I use lard in mine for the flavor).
Never use hot water from your tap to cook or to drink. hot water heaters buld up sediment, and that sediment contains bacteria and other nasties that can make you and your family sick.

Can you store Tortilla flour mix for a long period of time. The one I have on hand has no yeast in it. I'm not sure if that makes a difference.
