the only question is why wouldn't people just look for this stuff in their local thrift stores and cut out the middle man and save money?

Not everyone has access to good thrift stores. Where I live, there is an abundance. But not everyone has that luxury. I hear this all the time - "You are so lucky to have such good thrift stores."
Not everyone has the time to go thrifting - looking takes alot of time and energy. eBayers make it their job to scope out the TS and offer these items to everyone around the world.
