  • You ignorant wretch!

    Nice reference to "Tombstone."

  • I think that Alton was an inferior cook in these earlier seasons. Jarred salsa instead of cooking down your own vegetables? Maybe he was dating Sandra Lee back then...

  • DON'T LEAVE THE BEER!!!!

  • NEW YORK CITY?!!! (nostalgia moment) :)

  • im so hungry

  • now, will file power work just as well as tortilla chips?

  • I'm making AB's chilli today

  • How does "Quail Eggs" prepared for using as a topping for chili???? Pickled?, Boiled?

  • Alton Brown gets his diabeetus testing supplies through the mail.

  • Mmmm....beer...

    Now I'm thirsty and hungry!

  • So many chili recipes use so little chili powder. When i make chili with that much meat, I use 1/3 cup of chili powder.

  • "Allow me to present a service option: you put the chili in the bowl, you but the spoon in the chili, you put the chili in your mouth, how's that?" LOL

  • @KeepEuropeWhite Yeah and zombified Jews just cook up terribly

  • Thar w'go.

  • I love Alton but doing the entire show with bad accents drove me nuts.

  • @KeepEuropeWhite Noted. Have some chili!

  • luckily, I knows what I's doin' WOOO!

  • Well that's confusing. I always thought you put rolled oats in chili. Not to mention grinding up the meat.

  • "let me suggest a service option you put the chili in the bowl you put the spoon in the chili and you put the chili in your mouth house's that?" love that part and this recipe actually works you just gotta watch when you do the meat first time i messed up and burnt it all to hell.

  • He really loves cumin. I swear he mentions it a bunch over the course of the show.

  • i love altons show

    :D

  • BAM!!

  • Would this work in a slow cooker?

  • @GOLEAFS1967 Yes. I burned the bottom in a pressure cooker the first time I tried it so the next time I did it in a crockpot and it came out even better. I just cooked it until the meat was cooked through. That time it won me a small local chili competition by a landslide :D

  • Am I the only one old enough to get the NYC reference? :(

  • @deepskyblues get a rope ;)

  • @deepskyblues Nope. :)

  • WOO!

  • this episode's adorable :D I love Alton

  • lol... "BAAAM!"

  • ne one catch the Bam!

    emerill reference

  • @lanson0 A real pro would've got the two kick it up a notch references in the previous part.

    BAM! You got owned......because I'm a dork.

  • Another very good episode of Good Eats. I was glad to see Alton included a how-to on making chili powder. It really is a huge improvement over the pre-made stuff at the grocery store. The addition of salsa is a little unusual, but I can see it working. It'd be kind of fun to experiment with some of the more exotic salsas out there now.

I liked the cowboy shtick, though (IMHO) a little of it went a long way. Had to be a fun part for Alton to play , though. :-)

    4.5/5 stars.

  • I love chile rellenos. That's what I use those New Mexicans for.

  • Actually, Gerald P Hobbs his sidekick has a PHD...

  • Ditto to digitaljok. I am really glad that I read these comments into my first 1:15 of cooking. I checked the chili and was luckily able to salvage it. It was burning and drying out. I added an extra 1/4 beer and a cup of water. I also decided to add a can of diced tomatoes at that point because the salsa was almost completely disintegrated. Taste was really good though. Anyway, I turned the heat to 200 and I will check it periodically.

  • i find it hard to believe that chips salsa would really be just as good as something homemade..

    is this just for convenience?

  • Yes. You can certainly peel, seed, and chop your own tomatoes if you like, cut up a couple peppers, onions, garlic and some cilantro . . .

    But that's another show.

  • Just to reaffirm what Alton says here, the CASI (Chili Appreciation Society International) competition rules state that no filler is permitted in chili. This includes beans, amongst other things. So, if you enter in the Terlingua International Chili Championship, you won't be using beans. Them's the rules! That said, there's nothing wrong with serving them as a side dish and dumping them in your own personal bowl if you so choose. That's how I serve it at home.

  • i feel so educated now... i thought beans were a requirement for chili

  • Heh. Love the crack at the old Pace salsa commercials at the beginning of this part.

  • If you're putting in beans for health reasons would black ones be better than pinto?

  • I don't know about health... but i loooove kidney beans.

  • It was also the very first time I ever used a pressure-cooker, so I was nervous... but it came out GREAT!!!

My only problem, it was more "brown" than "red" ... so I suggest another tablespoon of tomato paste, and it could've been more ticker so go with FOUR handfuls of tortilla chips... that's all XD You all try it out, it's the best bowl of red you'll ever eat!

  • I made this last night! It was DELICIOUS! Most chilis my family make are just... "spicy meat soup floating in broth" but not the chili I made! This was THICK, tangy, the meat tender, the spice just right! And the best part... NO BEANS!!! I'm the only one in my family that doesn't like beans... so yeah, every time chili is made, there's ALWAYS beans in it. Finally good to have it bean-less

  • It's so funny at 7:13 where he gets startled by the cowpoker, clever scene.

  • hahha funniest notables:

4:40 to 4:45 he says "git!" hahaha and the editing cuts his last word....

4:50 to 4:55 he goes to his normal voice because he had some meat stuck on the bottom and he says "goshdarn it i got some stuck " hahahhahaha

and lastly 5:40 and on he spills chips and repeats his "there we go" there we go twice"... dies laughing...

  • "Ain't no one gettin' married or buried" hahahaha

  • This is Freaking Funny.............with a y.

  • this is my all time favorite episode! Time out...

  • If only someone would sneak into my house and make chili (with an 'I') when I'm gone.

  • This stuff is dang Tasty, its also double dang hot. Don't go adding more unless you knows whats yous doing! Luckly I knows what I am doing, Whoooo!

That was Great got a good laugh from it, now I am gonna cook up a pot of red.. for the beer I am gonna try some "Budweiser American Ale" and tell you later how it comes out!

  • I want to make the chilli with Bud American Ale also Energi2DmaxX, but you never came back to say how it turned out. I guess I'll have to do that after I make mine tonight :-)

  • Sorry about that, it came out great...just becareful if your using a pressure cooker.. you could burn the the meat and stuff on the bottom... I also added 2x 3x times the chili powder and double the chipotle

  • alton is the man!!!

  • 6:15 - 6:18 is hilarious

  • woops i meant 6:13 to 6:16

  • "now rusty aint nobody gettin married or buried so we only need one bottle." funny

  • "This here's MY favorite. It's made in New York City, so you KNOW it's good!"

    "Imported."

    "That's right, imported!"

I laughed so hard the back of my head hurt.

  • me too!

  • I wonder if you could use the tortilla chips Alton makes in a later episode...

  • Of course you could.

  • Ultimate money saver!

  • Gahhhh! Just did this in a dutch oven at 350 for 6 hours like it suggests in the video, and we ended up with some hard crusted spicy beef that we put in tacos! It sure was tasty though. Next time I'll just get a pressure cooker. Should have known that without more liquid it would dry out.

  • chilli tacos that sounds good

  • Doh, missed this comment before I tried this the first time in a dutch oven. Also experienced very dried out/burned batch after a few hours at 350 degrees which is way too hot. It only needs to gently cook so I figure 200-250 will be perfectly fine next time.

  • :37 HILARIOUS

"WOO WOO!! Yiz bit diddly ding ding ding!"

    BEST EPISODE EVER

  • WOOOOO!!!

  • alton is sort of drifting into a Red Green accent....

  • "Rusty time out!" Hehehe AB You Rock!

  • so with the pressure cooker it only to0ok 25 minutes ?!?!?

  • 3:48-3:55

    "These people must be fat"

    "Hows that?"

"There really are watching what they eat"

  • It's like a Fat Albert joke. Haha!

  • So don't go addin' more unless you know what you's doin'... fortuately I know what I's doin'. wooo! lol

  • that security camera joke, they watch what they eat, thats so "fat albert"

  • I thought so, too. Haha.

  • Oh my god! 6:13-6:15 had me laughing so hard!

  • they have a security camera in there cubert! they must really be fat! lmao

  • You know, I like cornbread with my chil.

  • i love the camera parts they're so hilarious!!

  • That has got to be the STRANGEST chili recipe I have ever heard. I know that tortilla chips and canned salsa are easier but that just does not seem right to me, but then again as I grew up mom and dad made real chili and it was really good. I guess I'm gonna have to give this one a try sometime just so I can say that I did.

  • i know what you mean

  • I know he can't give out specific product names due to potential copyright infringement, so I guess my question is, just what is a good middle of the road ale?

  • Most any pale ale should work.

BTW, I really don't dig this recipe. Chips, salsa, no beans? WTF?

  • I love Alton, but shitty jar salsa and chips? Come on, this isn't Semi-Homemade

  • May as well make your own beer, grow your own chilis, weld your own pots, collect your own herbs, carve your own wooden spoon and use a campfire while you're at it, eh?

  • lol. Smart ass response. Got me laughing. =P

  • Feels so strange to get responses to comments from over a year ago, hahaha

  • Now a days some recipes are complicated enough for the busy household so adding a few ready made ingredients make things easier.

  • Besides, this particular recipe has a story behind it from "I'm Just Here For the Food"...it originated as a challenge to make chili for the least amount of money possible. Often, it's cheaper to use salsa and chips.

  • Yeah, but the salsa adds a lot of flavor in little time.

And the chips are to thicken it. You either use tortilla chips of corn flour. So you're completely wrong there.

  • "rusty"

    "yes"

    "timeout"

    lol

  • Brilliantly funny and educational! Alton Brown and his gang are stupendous at their craft! Bring Alton back for more new Good Eats!

  • I love the part where he pulls on Rusty and says "You have got to come along!"

  • 00:27 is hilarous

  • Deb Rules!

  • WHOOO YAY DEB!

  • You think it hurts to talk that way long enough to film an entire episode?

Chuck and Alton look awfully good in western wear, they can make me chili anytime. <3

  • BAM!

    XD

  • I absolutely love this episode. Chuck = my Good Eats crush. After AB, of course :)

  • Lmao:

"These folks have a security camera in their cupboard. They must be really fat, they're really watching what they eat!"

    XD

  • Alright, I think I'm starting to come to terms with the fact that (sigh) Alton Brown is married and will never be mine.

but CHUCK CAN BE MY REBOUND. ILU baby!!

  • It's annoying since it has no substance. What's the point in saying "first" when it doesn't matter who saw it first.

  • Doesn't annoy me at all. You go with yer bad self.

  • And that is reason enough

  • i think i am in love thank u

  • Just so you know you can see the top of the set when the camera is angled at 6:42

  • "It's a pressure cooker you ignurt retch" lol

  • This is just one fabulous episode! They have such fun and they're informative at the same time! Cooking is fun! "There ya go!"

  • why does everyone go "FIRST" for the comments once i was first but i didnt go "FIRST"

  • Okay, tell me, what makes you think we care that you commented first?

  • We do, it takes up space and is very annoying. Lots of people would agree with me.

  • i agree

  • What I don't understand is why all you people care so much about someone else being happy about being first. So you mark a bunch of thumbs down on it and berate them for it?? Jeez, what a bunch of jerks. :/

  • That's right. People just gotta chill. Shacka bro
