@AlwaysSorenda I'm glad :). I didn't wash the rice I was in a rush. But I always wash mine, it gets very starchy. When you add a chicken bullion to the rice, it doesn't make that starchy. Your very welcome again. I hope you continue watching.

Any hints how to keep cilantro from going bad so quickly. I store it with a damp paper towel in plastic bag but never get to use it all before it goes black. Might try making sorito? Probably not spelling correctly...saw a video and someone said you can freeze what you don't use...do you know if that is true? Just about everything I make even if not Spanish, has onion, jalapeno peppers, garlic and sometimes cilantro. So would be a good use. Thanks for any info.

That is some proper looking rice...just perfect, fluffy and not gummy. Great recipe. Btw I would think the Jasmine rice would throw this way off. That stuff tastes like perfume. I love Spanish dishes and Asian but won't eat the Jasmine rice.
Hey Chris, thanks for the great video! I live in Japan and we don't have sofrito or sazon so I'm going to have to make it but I think I can. The problem is the rice! Japan only sells Japanese rice which is called koshihikari. It has a lot of gluten in it, and it's a lot of more sticky than long grain rice from south america. Any advice?
@gokuo64 Hey Johnny, your welcome man. Okay I just read your comment and I have a solution to your problems. First for the sofrito. All you need is a red or green pepper chopped, an onion, garlic and cilantro. For the sazon to turn the rice orange, you can use safron or use a couple of drops of red and yellow food coloring, and just add the cumin as you would in the vid and add some corriander seeds if possible. Rice solution below didn't have enough room
@picantesworld77 Okay for the Rice! Rinse your rice under water about 3 or 4 times. It will get rid some of the starch. Also try using chicken stock as well. Of the amount of water that is used, only use 3 cups of chicken stock, and the rest water. The chicken stock also helps that why I put chicken bullion in my rice, but it's only a little, more would be a benefit to you. Let me know Johnny if you have any other questions.

I also found some nice Jasmine rice from Thailand. Have you ever used Jasmine rice? Do you think that will work better? @gokuo64 Hey Johnny, I usually use tomato sauce, but because I was using black beans I don't put it in my taste is different. When I make it gandules (pidgeon peas) I always put it in. Yeah try that. Jasmine rice is fragrant so I never tried that, and don't know how potent the jasmine is in there, but yeah you can use that.
It's suppose to be 2 cups of rice, I added 4 though in the video. In this case the spoon method works good, which should be about the width of two fingers, meaning the amount of water over the rice.
There are two suggestions that I can give you for the vegetarian version. You can add a quarter of cup of barbecue sauce, or you can add a few drops of Liquid Smoke which is a liquid flavoring that is made by Colgin. Try Walmart to see if you can find it. Either one of them is good. The ham adds flavor to the rice, this is an alternative. Let me know when you try or have any other questions, I'll be glad to answer. - Chris

@CafeLeigh That's fine. However, if your using the jar base then you might want to add a little bit of Recaito cooking base as well. It will give it a burst of more flavor. Or you can add some cilantro towards the ending after you add the rice to the water before it starts to evaporate.
@picantesworld77 At the time I made I didn't have any recaito or cilantro- so I saw what you meant about flavor. I just added a little Adobo. It was good. I definitely use the recaito or cilantro next time. Once again great video!
@CafeLeigh Thanks Leigh, yes using adobo is good because it has garlic powder and other spices, which can be used. However, it also has MSG, which is an flavor enhancer containing high levels of sodium. As you watch in my video I explain why I don't used the packet of sazon goya because it has the same thing. Many old school cooks still fail to take into consideration about watching their salt. Your dying for thirst afterwards LOL.

@KissHope Try filling a cup half way with water, then stick the Cilantro in the cup then put it in your refrigerator.
Thats how I keep my Cilantro fresh.
