I find it's much safer and easier put a butcher knife in once at the end opposite of where the branch/stems come out, while on a cutting board, then force it all the way through with a rubber mallet. Once it leaks a little, pour over a cup, then finish cuttting through.
While craking the cocount all around the middle, it might be safer to use a butchers knife(the back of the knife). You will have the heft of a knife but without the danger of using the sharp part to crack the coconut.

Yikes! I wouldn't hold onto the coconut while whacking at it with a big knife!
