how come some of the videos i have watched have the current running from one wire to another, then there are others, such at this, which the current just ges off into the air?

Some "plasma speakers" require grounding and others do not because of voltage. This video is of a SSTC, or Solid State Tesla Coil, so it would have a higher frequency and voltage then a Flyback transformer, Although I have seen some ZVS ( Zero Voltage Swiching) driven flybacks that can discharge into air without a ground wire.

@kaylor87 wire to wire is transformer, you can use (theoretically) any kind. Wire to air however is tesla coil, uses resonant circuit and air transformer (no core).
