Research shows that this is the more humane way to kill a crab, if it's done correctly, but you can only learn through practice. Boiling water is still painful. Freezing doesn't kill them. Destroying their brains quickly is probably the most humane method.

Chilling them puts them into hibernation and boiling them kills them in seconds-done right they die before they wake up. When I crab I usually put them in a cooler with a couple frozen water jugs. It makes them much safer to handle As for "destroying the brain" how do you find the brain on an animal that doesn't have a head? This video demonstrates how difficult that can be.
