  • Does boiling the potato help the fries turn out crispy? I dont boil them so my fries always come soft and languid!!!

    The boiling is to make the inside of the chip softer.

    You would need then to fry twice to make them crispier.

  • Hey chef, what's the difference between this and the other video you posted about french fries that asks us to cool down for 30 minutes?

    These chunky chips were boiled first to make them soft in the middle. Then fried once!

    The other video I fried the chips twice! By letting the chips cool down and the refrying makes the chips crispier.

    At some stage I will be updating my chucky chips video and will be frying them twice to make them extra crispy :)

  • @OriginalNakedChef You can soak the raw chips in ice water for 15 mins. before frying them. This will remove some of the starches and lead to a crispy chip. One can also after frying dry the chips off and re-fry for a quick 20 to 30 sec.

    If you fry them twice they end up crispier

    I believe it is something to do with the starch in the chip melting and forming a coating on the outside of the chip. Then frying again and producing a crispier chip and crunchier

    I would have used sunflower oil or you could use vegatable oil.

  • When making fish and chips, can you use the same oil to fry both? Does it matter which is cooked first?

    You can use the same oil but cook the chips first otherwise everything will taste fishy.

    Fish and chip meals once came wrapped solely with a couple of layers of newspaper. The newspaper was used to absorb the oil/grease but there were concerns over ink poisoning (especially relating to the use of lead type in newspaper production) So eventually they phased out of this practice.

    Frying them and making them brown will certainly help to make them crispier.

    Once you have made the chips and whilst still hot, you can add Malt vinegar and salt. Also if you want to you can sprinkle some paprika.

  • great video and they look awesome.but i remember when chips were chips cooked in beef dripping they tasted like heaven but now in the chip shops they taste like shit half cooked tasteless crud probably down to the vegiterian assholes trouble with the uk they allways bow down to the minority thats why the pubs are empty with the smoking bans etc well what ever sorry for the gripe now doubt ill get some poxy complaints that will go directly into the trash folder

    Just try to do a good job and show your skills, cutting and saftey etc.

    I am sure once you have made them if your teacher could taste them they will really enjoy, especially with some salt + vinegar and maybe alittle paprika to finish, paprika gives a nice smokey flavour.

    I reckon you will pass with flying colours.

    I have done 2 different ways of cooking chips. Plus 2 videos of cooking fish in batter . But not together.

    If you like fish in batter I have one recipe that uses Guinness to make the batter(Very popular & tasty) also have one with fizzy water for batter.

    At sometime I will do a vid where I cook them both together :)

    Deep frying is good. I shallow fry because I do not have a deep fryer.

    Malt vinegar and salt is really nice. Very traditional in UK.

    But you can leave that off if you prefer.

    Paprika is nice on chips :)

  • Do you make the Fish after the chips so as not to make your chips fishy tasting from the same oil? Do you pour the oil down the sink when done? What do you recommend for tartar sauce? McD's is my favourite, but their is probably better

    When I make fish & chips, I normally use 2 different frying pans. That way they can both be served up hot.

    I re-use oil from the chips.

    I disregard oil for the fish.

    You can cook the chips first in 1 pan, and then use the same oil for the fish.

    I wouldn’t normally recommend pouring oil down the sink.

    Mcd’s chips are ok, different tasting. I do however prefer home cooked chips

    If you’re a big fan of tartar sauce, you probably want to make your own.

    Yes they are very similar to potato wedges. If I was going to make potato wedges, I think I would give the outside a spicy coating, maybe cook them in the oven instead of the pan, and make up a nice dip.

  • My mother was English and was good friends with a greek family who owned a fish and chips.They mix 1/3rd beef and pork 1/4rd fat into there vegetable oil to give there stuff that wonderful flavor.

  • they were not crispy because u didnt blanche them... after u draint hem from hot water u should put them in medium heat oil about 280 degrees for like 2-3min and then let them cool down in refrigerator for 10min and then put them back in real hot oil like you did just now.. that will make them real crispy and the best french fries

  • U must have been experimenting like I was. I figured this out a few months ago because I cook up fries every week for my college football team.

    But have also figured out that the fries you get from the grocery store are fried the same way u boil them then frozen. All we have to do is fry em' again.

  • Boiling Chunky chips first is the best way. Soft in the middle and crispy on the outside. Yummy!
