As one who's regular breakfast consists of an omelet, having made probably thousands of them, I have mixed feelings about this episode. It addresses the basics, but over time you begin to gravitate to that one special pan that you never use for anything else other than omelets, and that one spatula for the same job. It's part of eliminating as many inconsistencies as possible to make the best omelet every time.

I got my first nonstick pan on Saturday night, and last night, I made scrambled eggs. They turned out great, and slid right out of the pan.

I used to hate omelletes before i watched this, because I never got a good one. Now they're my favorite way to serve eggs because this technique makes a perfect omellete, every time.

My hubby wants to open his own place too. Good luck in the biz. It can be tough, but the key is to find one kind of food and do it well. Since he loves to grill, opening a grill seems perfect for him. We got our place named, too. His last name is Penn, so we're calling it Penn Station. We're going to cater to people looking for a nice getaway from work. We've got a great gimmick to attract people, but it's hush hush cuz we don't want anyone stealing our idea.

Kauai has a restaurant called Eggberts which serves over 150 different types of eggs and omlettes! The omlettes were wonderful so if you are ever in Kauai check it out!
