Too this day, this style of cooking with use of sugar is an American heritage and it is the behind the scene building block of the good old US of A.
try adjusting the air flow. You want to be cooking real low and slow. Sounds like you might be letting a little too much air into the grill which will burn your charcoal hotter and faster.

After watching several of these videos, I dragged my old Webber Kettle out of the shed and fired it up. It's over 20 years old, and it's the kind with the three dampers underneath, and one in the lid. I kept the dampers underneath wide open and tried to adjust the heat using only the one in the lid. I'll try closing it down a little more for Lo and Slo. Thanks.

Have you boys ever used cherry wood as a smoke? As far as apple goes does it have toe eatin g apples or would wood from a flowering crabapple work as well?
Im sure he added charcoal throughout the cooking process, just get some charcoal started in the charcoal stack and add it when the charcoal in the grill starts to ash out

try messin with the bottom and top vents...get your coals grey a red...then put the lid on with both vents closed...check on often to make sure you don't put the coals out...once the needle starts steady droopin at about 275....slightly open both vents to let the coals breath....once you get it steady were you want...you can control the temp with the lid pretty easy.you can either use the vent or you can also rotate the lid to control the heat

I made these yesterday. Used 4.9 lb spare rib. Everything was good. The scoring was great advice. I wish though I gave it 5 hrs-6hrs instead 4. The sauce at first smelled cheap and disgusting, but after I cooked it was absolutely amazing.

hey keena302, with this type of grill two chimney fulls of kingford (about 140 briquettes) will easily give you 4+ hours of low and slow, 250-275f. Remember, you can always add additional pre-heated coals to raise the temp. during the Barbecue! -BBQ Pit Boys

hey keena302, with this type of grill two chimney fulls of kingford (about 140 briquettes) will easily give you 4+ hours of low and slow, 250-275f. Remember, you can always add additional pre-heated coals to raise the temp. during the Barbecue! -BBQ Pit Boys

where r u guys from? it sure aint texas. we dont do sauce on the meat,but on the side. i will say im gonna try those cola ribs they look pretty.
