    How often do you add charcoal?

    Do you add more coals straight from the bag or do you get them going in a chimney before addding them?

  • @cher1292 the quality of ribs shouldnt be that bad cuz i think most are uniformly in quality if you buy it fresh from the butcher or even super market. but trimming and following every step of the process of BBQPitBoys helps a lot =]

  • Hello from Russia! We also like to BBQ, rather interesting method , but we use beer /wine instead of Cola. Also try some vinegar, that would make meet really tender , with a nice kick to it. Nevertheless, nice recipe!

  • Great! One question....did you have to put more charcoal in? I can't get 4 hours out of my Weber kettle without adding coal.

  • try adjusting the air flow.  You want to be cooking real low and slow. Sounds like you might be letting a little too much air into the grill which will burn your charcoal hotter and faster.

  • Thanks. I have a Big Green Egg....no problem getting several hours from a load of lump, but the BGE is made for that. After watching several of these videos, I dragged my old Webber Kettle out of the shed and fired it up. It's over 20 years old, and it's the kind with the three dampers underneath, and one in the lid. I kept the dampers underneath wide open and tried to adjust the heat using only the one in the lid. I'll try closing it down a little more for Lo and Slo. Thanks.

    you have a caol starter?

    try messin with the bottom and top vents...get your coals grey a red...then put the lid on with both vents closed...check on often to make sure you don't put the coals out...once the needle starts steady droopin at about 275....slightly open both vents to let the coals breath....once you get it steady were you want...you can control the temp with the lid pretty easy.you can either use the vent or you can also rotate the lid to control the heat

  • I made these yesterday. Used 4.9 lb spare rib. Everything was good. The scoring was great advice. I wish though I gave it 5 hrs-6hrs instead 4. The sauce at first smelled cheap and disgusting, but after I cooked it was absolutely amazing.

  • Greetings from TEXAS! I did some of these ribs yesterday evening, and if I didnt stop him at 4 ribs my son would have ate the whole damn rack! My wife took some to work today (6-5-2009) and she says when she heated them in the microwave poeple she didnt even know, were coming into the break room asking what was smelling so good!   • I want to know when using indirect heat, How do you make your coal burn for 4-5 hours? Do you keep adding coal over periods of time?

  • hey keena302, with this type of grill two chimney fulls of kingford (about 140 briquettes) will easily give you 4+ hours of low and slow, 250-275f. Remember, you can always add additional pre-heated coals to raise the temp. during the Barbecue! -BBQ Pit Boys
