  • I usually let the ibrik sit for the 15 seconds or so it takes me to arrange the cups and such, then I pour it slowly. I stop once I get more sludge then coffee pouring out. When I do this, I only get trace amounts of sludge at the bottom of my cups.

    Interestingly enough, I see a ton of people seemingly unafraid of getting most/all of the grinds into their cups. I'm just curious if it's just a matter of preference, or if I'm just missing out on something?

  • Funny is I did this exactly the same way 5 minutes ago and put it in "Fincan" too. I was like "hey lets look on youtube if there are How to make turkish coffee videos". I´m a Turk and I think you did it perfect. But don´t you ever "disrespect" my culture again! ;)

    you put the finjan on fire after 1min you put the caffe(with hel) wait for the caffe to raise and fall in, pick it up put souger with spon twist... then put on low fire and add hawiege.... before pooring twist it round for the brown cover appear and pour eqoually.

  • What's the point of saving the foam if you're just going to destroy it by pouring the liquid coffee all over it? I usually just hold the μπρίκι very carefully, and do my best job to preserve the καιμάκι. This generally requires pouring the coffee on the sides of the cup instead of in the center.

  • I'm a little confused because what is the time lapse from when you add the coffee until it starts to boil? I don't know, most vids Ive watched seem to leave that out. Also are there several ways to do it? One other vid said to add the coffee/sugar after ceza placed on high heat. then cooked through until done but they implied that processs is pretty quick and that you should not leave the coffee while its cooking.

    Does it make a difference if its cooked fast or slow?

  • @Ilkhan28 slow for better taste. the slower the better. use a candle for best results. it will take days to boil but it will be the best tasting thing you've ever had. unfortunately i don't think anyone has had the patience for the candle method.

  • Hobagz, thank you for clarifying the steps. I am Turkish and I never needed to fix coffee till today (my wife is American and I am not in Turkey anymore). I hope the complaints about your use of tea glasses does not bother you too much :) People are just sensitive about it even though you DID mention that they are tea glasses...

  • @samalini I was not disrespecting turkish culture. I even note that i was using improper fincanlar in the video. I made this when i was in Turkey and a poor teacher and did not own fincanalr. if you still think this is an insult to turkishness then go ahead. I disagree.

Some people can't wait to be insulted. Thanks again for doing this video. It is better than some of the other "authentic" tutorials on here even if they used proper cups.

  • @samalini I've also been to France (and most of Europe) and I've seen some really respectful Americans while traveling. I know there are many who are disrespectful, but it's unfair to categorize all Americans as such. I'm not going to call all French people snobs just because a few I've met are snobs.

  • This is not right. Turkish coffee is never served in glass cups. Quite small porcelain cups are used; otherwise it is just a kind of coffee if you serve in glasses. Btw, the glasses in the video are normally used to serve tea.

    some of your mistakes.

    i don't know if using a fire heater makes a difference because it is all about the speed of it.

    1. you should have made it in one boil.

    2. you should never ever stir the coffee.

    3. the foam of the coffee should have been on the top and this is done by boiling it once. once the coffee is brought to a boil you should pour them to fincans in rows until the foam is equally distributed. then pour them without altering cause it disturbs the foam.

  • the coffee was disgusting, I never in my life like a Turk does not drink a cup of coffee is not never seen the glass cup with the most important are internal and should be on the foam.

  • 1st - you dont make turkish coffee on electric cooker, it has to be one fire..

    2nd - you dont serve them on tea glasses which you have used...

    add: i think türk kahvesi is pronounced "kahvesee" cause i are ees in turkish+im sure the tin cooker is called finçan and the glasses bardak or in old turkish guppasi.

  • Dude, i appreciate your energy and time dedicated to this but Turkish cafe is actually done in two mins (maximum) :) And it is almost the same. besides as you mentioned the glaases are for tea not coffee... Coffee cup is half of Turkish cafe... If i were you i would wait till i buy some cups before shooting this film.

  • actually, drinking it in tea glasses is a tradition in some parts of Turkey.

    It is called Süvari Kahvesi, cavalry's coffee in English. They drink it on the last half hour of a hookah session :)

    And its exactly the same, except in a tea glass. As this fine gentleman has done here.

  • hi, great video! yes agree about the reheating but im italian not turkish but have lived and worked in many parts of Turkey, and not all places will give water with coffee, just depends on the people and place e.g. expencive place or cheep coffee place.

  • Thanks for the previous 'Making Turkish Çay' video (which is not currently up otherwise I'd have commented on that). I've been watching videos of different countries' tea ceremonies and appreciate a good clear presentation of the tea-making method :-)
