  • Eric, do you think you could use wax paper instead of parchment paper?

  • yeah i like this guy too. he shows you what you want to see.. this is actually helpful to me. oh and i love the dogs,,,they are magnificent animals!! ( i just purchased a dutch oven online and will have it next week.) 

  • Eric,did you ever try the bread flour?

    I saw how Jim Lahey centers the dough in the dutch oven.He flips it over into his other hand and then lowers it into the dutch oven. Brave man. I like your way with the parchment paper.

  • @3344utube i've done mixes of AP and bread flour, i think AP works better for this. and yes, the parchment paper works well. thanks for watching, eric.

  • 180 degrees ? You could cook that in a parabolic solar oven out in the yard at those temps..just set it and forget.

  • @trentontrading i'm very interested in solar cooking, but in New England the sun doesn't cooperate all year.

    for baking bread, the oven needs to be real hot, 450F, to get the crust right, and the internal temp will eventually be 160-180. thanks, eric

  • @trentontrading I think if you don't have the oven very hot you won't get the "oven spring" needed for the bread to rise. 180 degrees isn't hot enough.

  • Brilliant! That's the most scientific artisan bread experiment I have witnessed, to date. Thanks for doing that. We have a bit of a camping trip planned this weekend, and I'll bring the dutch ovens along and try this, now that I know what temperature I'm aiming for.

  • @chuckarama451 let us know how this works out for you. i think its important in outdoor cooking to have coals on top of the dutch oven as well as below. thx, eric.

  • If you can get your hands on a sourdough starter, I think the best and easiest bread you can make is No-knead bread made with a dessertspoon or so of starter instead of the yeast.

  • 9:20 why can't you just use a paring knife (or similar) for that function, why rig up a razor blade?

  • @pavelow235 for some reason it doesn't work, i think you need a super sharp blade, and its easy enough to make one.

  • The no knead looks a bit overproofed. What size dutch oven are you using? I only ask becaust it looks a bit smaller han my 5qt. The parchment paper method helps to keep the dough from deflating. Peter Reinhart also has great books if you're interested. He's got youtube videos for shaping too.

  • @TheMrBKennedy i'll have to check the size, i thought is was a 5 quart.

  • You should show us the camper trailer that the stove came from. Might be Interesting and tell us why you did It.

  • @1ChevyGuy375 the camper is in my neighbor's field, i'll have to get a picture of it for you all. we needed a propane kitchen stove for our house so our neighbor gave us the stove out of the trailer.
