never, ever clear a table until all the clients are all done eating. It's presumptuous and gives the message "Hurry up and eat we want you out." If there are courses
involved, as the whole table finishes the course - then those dishes are cleared to be ready for the next course. This is correct waiting basics.

I'm a waitress &I pay more attention to how long it's been since they last took a bite, rather than if their plate is only half eaten. I do that because there are people who eat almost everything &ask for literally the last bite to be wrapped up, &then there are the people who only eat a few bites &get the rest wrapped up. It's easier to tell if the're done if they haven't eaten in awhile instead of how MUCH they've eaten
Customers are not there to stretch out.. they need to get in, eat, and get the fuck out of the table.. so others can eat.. waiters are there to make money, not babysit.. If they want to go " stretch out.." go to a movie, or get netflix and order in..
