    I think plain fat free(or not) greek yogurt would work?? I was going to try it with fat free sour cream ..i always seem to use those 2 ingredients to substitute for anything that needs cream.

    this cauliflower idea is very sneaky! muahaha!

  • @ChefTips Regardless it looks awesome. But I hope chefs should really consider not just lowering the fat but also lowering the glycemic index. The huge amount of insulin due to sudden flow of sugars in our blood is what really makes us fat. Most low-fat food are low in fat but high in simple carbohydrates or high in glycemic index which make us fat. Well at least according to this -> watch?v=SSLn0vGh5ZQ

    You can do that too and toss it all together in the pan. You will have to serve immediately as the sauce will absorb into the noodles.

  • I just made this. Wow this is better than your average alfredo sauce IMO. Goes very good with Grilled chicken or skirt steak slices.

  • Too slim it down a little more, you could sub fat-free evaporated milk for the cream. It's a good substitution that still maintains the creaminess without the fat. Great recipe, Chef! Thanks.

    Sorry, but I don't have the nutrient analysis on this.

  • @cjuarez75 I don't know an analysis, but on Weight Watcher's recipe builder, subbing fat-free evap milk for the cream, it comes out to 10 points per serving (if you make this recipe 4 servings).  That makes it much better than regular full-fat alfredo, but far from a low fat meal. More like an occasional treat. Cheers.

    Good question. I have not tried to freeze this sauce. We usually eat it up right after it's cooked. It should freeze well.

  • It would be very helpful Jason if you would include how many servings your recipe makes. I would like to make this sauce for 7 people. I have no idea if I need to double this recipe for the sauce??? MANY recipes don't bother to mention how many servings are being made. Very frustrating when you are at the grocery store and don't want to waste money. :-(

  • I love your videos. This recipe was especially good for me since I'm vegetarian, love caulfrlower, and pasta! OMGosh this was heaven. I don't like making requests, because you probably have so many, but I love watching your veggie dishes. I used fresh parmesan because it didn't contain any rennet, which dry parmesan does, substituted fresh veggie stock and sauteed mushrooms and got rave reviews from the parents and the family. Definitely a keeper! Thanks so much ChefTips!

  • Made the dish tonight. Forgot to buy cream, used IMO instead, tried pecorino romano instead of parm, was out of fettucini, used egg noodle instead. Topped with fresh basil and more pecorino, came out yummy and looked fresh n beautiful. Used a dark mushroom, crimini I think, and it had the same texture as chicken. I don't think u could go wrong w/even the basic recipe. Don't be afraid to improvise!!! Definitely will make again.

    I also mixed cauliflower puree with ricotta cheese when I made other pasta dishes. My husband hates cauliflower but he couldn't even tell if it was in there.

  • A few things to add, if Chef Hill doesn't mind...

    I you decide to make this at home, make sure to puree the cauliflower (or any other vegetable for that matter), while it's very hot or else the sauce will turn out lumpy. Also, if you're using a blender, hold the lid on with a rag and pulse 5-6 times, or else it will explode all over you and your kitchen... Alfredo sauce with a side of 2nd degree burns doesn't sound very appetizing lol

  • Being Jason's wife and all, I can vouch for this recipe. At first, I could imagine it tasting very good, but it's amazing! And our picky kids love it! We're going to try it next in a vegetarian lasagna. Honestly, I'd even eat it as a soup. I like to add extra white pepper and salt to mine.

  • Neato. I was thinking about changing my green bean casserole recipe by swapping out the cream of mushroom soup with some kind of cauliflower puree.

  • ckrtom2 Yeah, I found out how versatile cauliflower is. You essentially had "mock mashed potatoes" before you thinned out the mixture.

    I like to use a "creamy" cauliflower base (much like your sauce) for a cream of chicken/celery "soup." It's great and reminds me of the canned Campell's soup I had as a kid but more gourmet and so much healthier.
