@jistutz I never tried millet, but I don't see why not. Just make sure the millet flour is soft. I would mix the flour with equal amount of water to soften it before I would mix it with the cooked rice. Let me know how it comes out.
@aoimhe Yes. You need to bring I cup of water to a boil. Add 1 cup of quinoa, stir and bring bac to a boil. Turn off the heat and allow the quinoa to soften and then add the cooked rice. I am sorry that I did not make that clear. Thank you for your comment.

@dream1flower Quinoa is gluten free. There are different kinds but all are gluten free. Some boxes mixes quinoa with other flours and that you should watch out.
