Mirin dajo was a real person who could actually be stabbed with those swords, he had multiple scientists experiment and x ray him. None could find out how he did it.

I too think he real did it. I imagine he was able to activate surrenal glands and pour in his body troughout the blood a very great amount of adrenalin that is a powerful vasoconstrictor, probably activated by the means of an autogenerate enormous fear. In many film we can see him sweating a lot, cold sweating, so the sword cannot hurt the vessels.
