  • Nice video! Love your dogs too!

    Eric, when you try making this bread again, be REALLY REALLY careful when pouring the water into the hot metal bowl underneath the lower rack because if you splash any water on the oven window it can/will crack!  What you can do is put a kitchen towel right on the glass as soon as you open the oven door, slide your boule in, pour the water in the metal bowl, remove the towel, and close the door again.

  • @Roxses20 having peel and stone are key, i think, you can make your own peel, we have video how-to for that. and pizza - bread stone is about $25, i think, thx, eric.

  • I tried this recipe, but when I took out the dough to use after 2 days of sitting in the fridge, it smelled very strongly of alcohol and tasted like beer when baked... I don't like beer :(

  • Contrary to popular belief, kneaded bread is not hard to make either by hand or with a kitchenaid. This "no knead" method is easy initially but i've found the dough to be messy, and frustrating to work with. I'll put my kitchenaid prepared dough and final product up against any "no knead" bread any day!

  • salt kills the yeast, best is not to add salt with yeast you can add the salt when you have almost formed your dough

  • I mixed this dough recipe last night, instead of using a tall plastic storage container for the dough, I took the glazed clay bowl and lid from my old crock pot. The height and size of the crock bowl works better in my small refrigerator. Since I seldom use my crock pot, I have put the bowl to better use.

    Now, here is a question, is it safe to use a glazed crock pot bowl, with a metal or pyrex lid, to create a dutch oven, to bake the bread?

  • @erochow Eric if the pot and glass lid from a crock pot would work as a dutch oven, it would certainly be a savings over purchasing a cast iron dutch oven. You can find nice crock pots with glass lids at Goodwill for around three to five dollars. Evidently the electrical part of the crock pots did not work, so Goodwill tossed them and were only selling the thick pots and glass lids. Some crock pots have the plastic lids,,,but it is fairly easy to find a glass lid replacement at Goodwill.

  • @TheTexasbuddy neat idea to go to goodwill. cast iron dutch ovens ( the kind that are not enameled and fancy ) are not expensive if you shop around, and they are great for baking and cooking on the stovetop, so that might make it worth the $ thx, eric.

  • Great looking loaf. I did something similar only baked the loaf in the dutch oven like a no knead loaf which worked well too, I will send you the video.

  • does the bread not dry out to easy. Like with normal bread you use some butter to go against drying out??

  • Tried this last night and if you mentioned it in the video I apologize - started baking the loaf at 375 for about 35 minutes (I baked it on a cookie sheet with a cast iron skillet underneath with 1/2 cup water to create the steam) and then cranked the oven to 425 for 8-10 minutes and then let cool. The loaf turned out sponge-y but crispy on the outside. Thanks for the fun!

  • @erochow Yep, I did that first - and had no complaints. Well, my wife thought the bottom crust was too crust-y - but hey, different strokes for different folks... So I thought I would try it at the lower temp and then crank it at the end and it worked out. I'm actually going to try that technique with pizza dough. I'll let you know how it goes. Btw, a little hummus spread on the ham and egg breakfast sandwich is amazing. Grilled cheese is up next my friend - have a great day.

  • I made this this weekend and wow wow wow loved it so much made three loaves. So far my favorite way to eat it is with a little butter, a fried egg (over medium) and two slices of thin ham then toasted yummmmmmmmmmm

  • Thanks for you video, love love love your personality, so down to earth. Also the cut away showing the two dogs with the stick made me giggle. My dog loves the water to, I have to leave his leash on when he jump in the water just in case he goes too far. Always look like I'm fishing and my dog is attached as bait.lol, but anyway, thanks for the video, keep them coming.

  • This is a great video ! You make it seem so easy without coming across as stuffy (if that makes any sense). I love the comraderie between you both and the dogs are adorable ! I've been wanting a baking stone ! I cringed when you said it broke after one use. I'm going to have to research a decently priced one that is durable.. and great baking peel ! It's pretty awesome that you managed to make your own. Thanks for posting the video ! I might now be brave enough to try out the recipes !

  • @bajastoner i broke our baking stone, which is basically an unglazed tile, a while back, but it still works, so we use it. i burned pizza cheese on it last week, not fun... eric.

    I am a fan of Lahey and breadtopia, sam principle. I like the idea of keeping this is the fridge and have a little at a time since I am alone. Have you ever tried a La cloche instead of useing water. I made my own by buying a clay flower pot and a clay flower pot dish. BAke the bread in there Like Jim does.

  • The bread looks very good. We bought a Moulinex bread maker which does a pretty good job - however, have been making mostly brown bread and would be nice to have some white for a change. It does the whole job for you, however, so maybe less labour intensive in the long term (but prob. not such tasty bread).

  • Do you show those dogs - they look like pedigree. We are thinking of buyng a pedigree pointer ... already have an alsation but want a show dog for interest.

  • What does "2" packets of yeast mean? Quantity wise?
