Flatout 2 will work wine with Wine, just take it easy and start with a new wine prefix (WINEPREFIX=$HOME/path/to/new/wineprefix) to avoid problems with other software, and then check AppDB for comments about how to get it running. :)
Try starting the game from a terminal, without the WINEDEBUG=-all command. What does the Wine output in the terminal say? Please upload it on Pastebin and send me the link. :)
The stuttering is caused by the RecordMyDesktop program, because it is writing a big cache file to the same hard drive that the OS and the was installed on. You will see the same kind of stuttering in all my videos, but maybe less in my newer movies (new RmD version + separate hard drive).
Sure, there are some lower framerates, but this games runs very smoothly when I'm not screencasting.
I made that choice because I think Linux is a superior OS for every thing I use computers for (Surfing, programming, school work, movie watching, general geek stuff) with less computer resources used and the possibility to customize and choose things for yourself.
Sure, DirectX games will often perform worse, and some newer games doesn't work, but you don't have to use Linux if you don't want to, or you could do like me and play those games in Windows.
In fact it runs better in fullscreen, especially when having Compiz + Emerald with much eye candy. The best thing is to start a new x server that is separate for the game, but that is a bit advanced for most users.
Why I play all my games in windowed mode is because I like multitasking, and it is a lot easier changing window when you are in a windowed mode. :)

I have Geforce 8800GTS, Intel C2D E6850, Ubuntu 8.10 and Wine 1.1.5 and Flatout2 can not run. I don't know why. Any suggestions?

You problem is because Wine see the search path as more than one because of the space in "Program Files".
Either use "/home/helike/.wine/drive_c/Program Files/path/to/file"
or
/home/helike/.wine/drive_C/Program\ Files/path/to/file
Wine isn't shit simply because you are writing the wrong thing. :)
