I'm confused. He said the grapes come in cold, and then he brings them up to room temp, but he also says he wants to bring the temperature down at 1:52.
I assume he meant to say up instead of down as he's dealing with yeast that needs higher temperatures to reanimate.
If anybody knows for sure, or perhaps if I missed a step in there. Maybe he has a heating then cooling process. idk
I can't think of a more boring afternoon for a kid. Couldn't they take him to the park or something?

It doesn't boil. The yeast gives off carbon dioxide when it breaks down the sugars. That's where the bubbles come from.
The yeast also gives off ethanol... which is the whole point. ;)
