Basic Chicken Stock-Food Network

I love making chicken stock. The only difference is that I puree the mirepox and I let it turn brown just a little bit. Then I add the chicken and let them cook a little bit too. Then I add the water and a couple bay leaves...its oh so good!

Why waste perfectly good chicken - that's so not sustainable! When you have a cooked chicken toss the bones in a freezer bag and store in the freezer. Keep doing that until you have a few carcases worth of bones - then make stock. No waste :)

@rachiti you dont have to waste the meat. If you remove the chicken from the pot after an hour of boiling you have some delish and flavorful poached chicken. just pick off the meat then place the carcus back in the pot to continue boiling. no waste :)
