i doubt its a v-12, most boat makers use mercury and mercury doesn't make a v-12 only v-8's. there probably running two high performace 525 merc v-8s.

Yep, probly right there mate. They're a popular lump to put in boats this big. Probably sitting on 7,500-8000 rpm. Thats a lot for a big block!

I think that to tell the difference, a little mechanical knowledge isn't enough, you need a bit of a musical ear as well.

They're definitely in the 7-9K RPM range. There's nothing like that sound. They may be 540 BBC too. Those are becoming more popular for boats like that. Hard to say without seeing it for yourself.
