1) person with non-gmail-address goes to docs.google.com and clicks on "Create an account now" and then "Use another email" and signs up for a google docs account - and uses whichever email they like for their google docs account

2) the invitation goes to their email address associated with the google account, whether it's gmail or non-gmail
