I've found that learning harmony theory helps me with playing melody. Walter Piston talks about the meaning of each of the intervals. Taking a piece off the major third bastardizes the melody, creating a feeling of disappointment. Taking a piece off the sixth and seventh makes it consistent. When you put the pieces back, there's a resoluteness that allows the singer to express strong emotion.
When a tune is about to make that transition, you incorporate that drama as you play.

I LOVE Scarborough Fair, I don't care for Danny Boy as much (probably because I've listened to too many ballads for one lifetime). As for messing up in the Foggy Dew, I could barely tell -- and that's coming from someone who plays the song! If you don't point it out, no one usually notices. Excellent job =)
I think that you can play well, and the song is nice, but I dont think its compleatly right to play it on an eletric. Regular wooden ones... I don't know, I personaly perfer playing the wooden style, expessially for Irish. Maybe it just makes the vibrations sound more like Irish. I'm not sure, but I think Scarborough Fair is better on a wooden.
Do you have the music to it? I cant find it anywhere... It really is pertty though.

Scarborough fair is an olde English folk tune, it's not Irish. But that is in no way a criticism, this was awesome.
