Hmm... I'm pretty sure that for a shell, you're not supposed to try and shape it like she does.. you just squeeze harder at first to make the thickest part of the shell, then slowly relax your grip, then release. That way you have a better chance of having them all look the same.
I'm very new and have been self taught thus far but when she started on the bottom of the cake to me it looks like what Wilton calls a "reverse shell"? I've never seen it done but the results look somewhat similar.
