well most of this so called "chinese food" in the west isn't really authentic chinese food. I had a former father in law from shanghai, and he wouldn't just randomly whisk some odd stuff together and claim it to be chinese. To me the term authentic is simply food according to how its done in china. I love these cooking videos.
For me, as long as it has soy sauce, it is chinese.
Like, i am gonna mix shrimp & octopus, garlic, green onions, bell pepper, chilly seeds, celery, carrots, soy sauce, and at least 4 table spoons of zsechuan sauce.
What makes it chinese anyway?, really, i want to cook chinese food.

Sichuan is the Hanyu Pinyin Romanisation for 四川 as adopted by China, The UN, the ISA (International Standards Association) etc. Few people in Sichuan would recognise the old Gade-Wiles transliteration which is only generally used in the USA. Even fewer would recognise your recipes.
