The clicking noise is what either Bono or The Edge are hearing in their in ear monitors, it gives them a tempo to play to, it is used by all live bands these days,when people make recordings like this from live concerts they tap into the in ear monitor channels and record them instead. Thats why the sound quality is so good. I hope that answers the qustions about the clicking sounds!!!!
