Takes lots of skill. Homing Ground Pound, accuracy, careful not to fall off, etc.

i dont think you could swim around the coarse anyways since the current pushes you in the opposite direction of the course

I'm guessing you got on the wrong part of the ring. If you get on a lower part, you can Long Jump but just barely miss.

I noticed that at 2:06 in the video, the coins homed in on Mario after he spun, just like when you have the red star.

I believe that's because he's swimming. Coins underwater are normally sealed in bubbles so you can't pull them in with a spin, but when they aren't spin attacks can pull them in. Probably designed to make it less frustrating to collect things underwater.
