Oops, the phase diagram was wrong, that's why the liquid zone was a bit confusing. the line that divides the gas from the others should be going up increasingly (and not up first and almost horizontal later), and stop at the critical point. That's why in northwestern regions of Argentina, Chile and Peru people use pressure cookers, some bacteria won't die at such temperatures and the only way to kill them is to raise the boiling temperature by other means, such as raising the pressure using special cooking pots!

That's frakking awesome, the fact that we know that you can't have a good cup of tea or coffee on the surface of mars is incredible.
